Chickpea "Not Potato" Salad



This is just like an original potato salad minus the potatoes and egg…add vegan mayo and chickpeas…Yes!  I know most say you should not heat up mayo, but I like potato salad slightly warmed up because I am not a fan of cold food period; it’s up to you of course.

Ingredients:
2 (15 ounce) cans garbanzo beans (chickpeas)
½ cup vegan mayo
1 teaspoon onion powder
1 teaspoon garlic powder
2 tablespoons mustard
½ teaspoon maple syrup
½ teaspoon salt
½ teaspoon pepper
½ cup chopped made salsa
½ teaspoon old bay (yes that’s right I said old bay)

Directions:
Drain water from chickpeas and dump them in a bowl.
Empty the remaining ingredients into the bowl and stir all together.
Oh, that’s it!
