I cannot post this recipe without giving credit when its
due….my mom introduced me first to spinach with pine nuts and raisins, and
since then I have fell in love. So this
recipe was purely inspired by her, with a little twist. I think it looks like a Christmas dish with
all the colors so hey add it to your Christmas dinner with you family if you
want. At first the ingredients may not
sound great together but trust they mix so well and give this dish all the
flavoring within every bite to up the chances of you eating more spinach and
getting all that IRON! It is so simple
to make too.
Ingredients:
2 bags of spinach
¼ cup pine nuts
¼ cup dried cranberries
1 tablespoon balsamic vinegar
1 tablespoon balsamic vinegar
2 garlic cloves
1 tablespoon red pepper flakes
2 tablespoons olive oil
Sea salt and pepper, to taste
Directions:
1. Get a skillet or pot going with some olive oil and the
garlic.
2. Meanwhile, wash your spinach good
3. Began cooking your spinach (on high heat) in the pot or
skillet and add salt and pepper on top. Do
not walk away from the stove as you want to flip the spinach so it doesn’t cook
for too long. (The less time you cook
leafy veggies, the more nutrients you get).
4. Once the spinach is finished cooking (I would say about
5-8 minutes-it will turn darker green at this time), add rest of ingredients, stir
and turn off heat.
5. Stir and let sit about 5 minutes, then enjoy.
