My mom makes the best apple pie (I mean really), and
trust, the plan is to get her to make one vegan next time. So in the meantime since oatmeal is an
excellent source of fiber and protein which vegans need, I thought an apple pie
version would do me justice. YUMMY!
Ingredients (double this recipe if cooking for two
people):
1 + 1/4 cups Almond Milk
1/3 cup oats
1/2 tsp vanilla extract
1 Granny Smith apple, peeled and cut up however you like
1 tsp fresh lemon juice
1 tablespoon chia seeds
1 tsp ground cinnamon or nutmeg
1/4 tsp ground ginger (only if you have it)
1-1.5 tablespoon maple syrup
1/2 cup applesauce (no sugar added kind)
2 tbsp chopped walnuts, as a garnish
Directions:
1. In a pot over medium heat, mix together the oats, apple,
chia seeds, applesauce, 1.25 cups of the Almond milk, 1 tbsp of the pure maple syrup, cinnamon
or nutmeg, ginger. Mix really good.
2. Heat for about 8 minutes, stirring often. When the
mixture thickens and the liquid is absorbed, it is ready. Stir in the pure
vanilla extract next.
3. Pour into a dish and sprinkle with the walnuts, a
pinch of cinnamon, and a drizzle of pure maple syrup. Add a tiny bit of almond
milk on top.
