Curry Dirty Rice w/Soy Protein & Eggplant



Dirty rice is famous to most college students I would say.  Its one of those bulk dishes that usually only require meat and rice.  This version of dirty rice has soy protein as meat and eggplant so you don’t feel like you aren’t getting any vegetables.  You should be able to find Gardenin (meatless) products in the healthy/organic section of your supermarket or just a full organic store.  I actually made too too much and ate off of this meal for days and days.  So easy to make, enjoy!

Ingredients:
1 fairly sized eggplant (cut in chunks and peeled)
                                6 cups cooked brown rice (ok this is a lot so adjust if need be)
¼ cup soy sauce
2 garlic cloves (minced)
2 tablespoons curry powder
Salt and pepper to taste
¼ cup hot sauce
1 bag Gardenin beefless ground
2 tablespoons olive oil

Directions:
1.  Cook eggplant in a skillet with olive oil and garlic until they turn golden.  Once cooked, add curry powder.
2.  At the same time, cook the ground soy protein in another skillet.  Sprinkle salt and pepper (tot taste) while cooking it.  It should take about 5-6 minutes to be completely cooked.  You will know because it will turn dark brown.
3.  Lastly place all of the ingredients  in a LARGE mixing bowl and mix until well combined.
