Southwest Tofu Scramble w/Veggies



I usually drink a protein shake every single morning, so although this a breakfast item I like to eat it any time of the day.  But its great with some fresh pressed juiced as well as a side of vegan biscuits.
YUMMY 4 MY TUMMY!

Ingredients (serves 6):
2 (15 ounce) tofu (any texture is fine but I like extra firm – gives more of a scramble fill)
2 zucchini (sliced, chopped in half pieces, and cooked)
1 cup fresh salsa
1 can black beans (drained)
1 can diced tomatoes (drained)
1 teaspoon cumin
1 teaspoon curry powder
2 table spoons minced garlic
1 teaspoon lemon juice
½ tablespoon soy sauce
1 tablespoon nutritional yeast (if you want a little cheese flavor)
salt n pepper. to taste

Directions:
1.  Sauté tomatoes, garlic, and salsa in extra virgin olive oil for 2-3 minutes.

2.  Reduce heat some then add the crumbled tofu, black beans, zucchini, soy sauce, lemon juice, and all seasonings.

3.  Cover and cook for 6 minutes but stir occasionally.

4.  Sprinkle the top with nutritional yeast (if using) and enjoy!
