Zesty Pesty Marinate Mixed Veggies

This is a great side dish cold or warm. You will get the marinated taste within every bite and can eat it by itself or alongside a slice of pizza or red quinoa. Always know you can add your own veggies as you see it. Ok I am going to give you the can version, but making everything from scratch (using fresh vegetables is also a GREAT of course BETTER idea……using the can is the quickest way to do it though.

Ingredients:
1 can corn
1 can string beans (French style is best)
1 can lima beans
1 can peas
1 cup minced onion
1 cup minced bell pepper (any color should do)
1 cup minced celery
¼ cup extra virgin olive oil
1 teaspoon of salt (season to taste)
1 teaspoon pepper (season to taste)
1 tablespoon water
1 ¼ cup distilled white vinegar
¾ cup raw sugar (agave would do too)

Directions:
1. Mix all veggie ingredients together.

2. Get a pot going with all rest of ingredients in, bring to a boil.

3. Turn down heat and let simmer about 7 minutes.

4. Lastly, let the marinate cool then pour over the veggies and leave in fridge overnight or at least 4 hours.
